As families navigate the busy school year, Lori Taylor from The Produce Moms shares innovative, quick, and appealing recipes featuring fruits, vegetables, and proteins to keep children satisfied and healthy amid hectic mornings.
As families settle into the school-year rush, Lori Taylor of The Produce Moms is pitching a simple answer to the daily meal scramble: recipes that are quick, kid-friendly and built around fruit, vegetables and protein. In a recent appearance on WISH-TV, Taylor highlighted easy breakfast and snack ideas designed to help parents keep children satisfied without adding much prep time.
Her first focus was baby carrots, including limited-edition back-to-school packaging from Grimway Farms. Taylor showed ways to make them more appealing to children, such as pairing the carrots with ham or turkey, cheese and serving them on skewers. She also suggested a carrot-based pizza ranch dip made with Greek yoghurt, mayonnaise, tomato paste, ranch seasoning, Italian herbs, mozzarella and mini pepperoni.
Taylor said presentation can make a difference for young eaters, noting that children are often more willing to try food when it is served in a playful way. She offered another option by turning baby carrots into stacked “Lincoln Logs”, cutting small notches into the vegetables so children can build tiny cabins with them.
She also shared breakfast ideas that combine produce with protein. One option is a cottage cheese and apple bowl topped with trail mix and a drizzle of maple syrup, a recipe The Produce Moms describes as a fast, balanced start to the day. The site also features Greek yoghurt banana bread with walnuts and homemade egg bites that can be made ahead in batches, giving families a cheaper alternative to coffee shop versions, according to The Produce Moms. Taylor said the recipes are meant to give busy households “healthy, simple food solutions” for hectic mornings.
