A new chickpea kebab sandwich recipe combines spicy, crunchy kebabs with fresh accompaniments, providing a nutritious and adaptable alternative to traditional street snacks, ideal for any time of day.

When the weather turns damp or the evening hunger strikes, a chickpea kebab sandwich offers a filling alternative to fried snacks. Aaj Tak says the recipe brings together spiced kabuli chana, garlic hung curd, green chutney and fresh vegetables in a sandwich that is meant to be both hearty and lighter than many street-style options.

The filling starts with boiled chickpeas cooked briefly in ghee with coriander powder, chana masala, chaat masala, roasted cumin, Kashmiri red chilli, turmeric, black pepper and kasuri methi. A little water is added so the spices do not catch, then the chickpeas are gently mashed, leaving some texture before coriander and lemon juice are mixed in. Once cooled, the mixture is shaped into kebabs and shallow-fried until crisp and golden.
